This classic Southern cake has something for everyone — marshmallows, pecans, and a whole lot of chocolate.
Mississippi Mud Cake

Ingredients
- 1 1⁄2 cups all-purpose flour
- 1 cup sugar
- 1 cup firmly packed light brown sugar
- 1⁄2 cup natural unsweetened cocoa powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt, divided
- 1 cup plus 1 tablespoon unsalted butter, melted and divided
- 1 teaspoon vanilla extract
- 4 large eggs, lightly beaten
- 1 (10.25-ounce) package miniature marshmallows
- 1 cup chopped pecans Chocolate Glaze (recipe follows)
Instructions
- Preheat oven to 350°. Spray a 151⁄2x101⁄2-inch jelly-roll pan with nonstick baking spray with flour. Set aside.
- In a large bowl, whisk together flour, sugars, cocoa, baking soda, and 1⁄4 teaspoon salt. Add 1 cup melted butter, vanilla, and eggs, stirring until combined. Spoon into prepared baking pan, spreading evenly.
- Bake until a wooden pick inserted in center comes out clean, approximately 20 minutes. Sprinkle with marshmallows. Bake until marshmallows soften, approximately 5 minutes.
- In a medium skillet, combine pecans, remaining 1 tablespoon butter, and remaining 1⁄4 teaspoon salt. Cook over medium heat, stirring occasionally, until toasted, approximately 8 minutes. Sprinkle over marshmallows; drizzle with Chocolate Glaze. Serve warm or at room temperature.

Ingredients
- 1⁄4 cup natural unsweetened cocoa powder 1⁄4 cup whole milk
- 1⁄4 cup unsalted butter
- 1⁄8 teaspoon salt
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine cocoa, milk, butter, and salt. Bring to a simmer over medium heat, whisking constantly. Remove from heat; whisk in confectioners’ sugar and vanilla. Use immediately.
