Bacon and Goat Cheese Popovers

Ingredients
- 3 tablespoons butter, melted and divided
- 4 large eggs, room temperature
- 2 cups whole milk, room temperature
- 3 ounces crumbled goat cheese
- ¼ cup finely chopped cooked bacon
- 2 tablespoons finely chopped green onion
- 2 cups all-purpose flour
- 1 teaspoon kosher salt
Instructions
- Preheat oven to 400°. Brush wells of a 12-cup muffin pan with 1 tablespoon melted butter.
- In a large bowl, whisk together eggs, milk, goat cheese, bacon, and green onion. Whisk in flour and salt until smooth. Whisk in remaining 2 tablespoons melted butter just until combined. Divide batter among prepared wells, filling to the top.
- Bake until puffed and crisp, 30 to 35 minutes. (Do not open oven during baking.) Serve immediately.
