Savory and tangy, these Bacon and Goat Cheese Popovers will elevate any of your winter meals.

Bacon and Goat Cheese Popovers
 
Makes 12
Ingredients
  • 3 tablespoons butter, melted and divided
  • 4 large eggs, room temperature
  • 2 cups whole milk, room temperature
  • 3 ounces crumbled goat cheese
  • ¼ cup finely chopped cooked bacon
  • 2 tablespoons finely chopped green onion
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
Instructions
  1. Preheat oven to 400°. Brush wells of a 12-cup muffin pan with 1 tablespoon melted butter.
  2. In a large bowl, whisk together eggs, milk, goat cheese, bacon, and green onion. Whisk in flour and salt until smooth. Whisk in remaining 2 tablespoons melted butter just until combined. Divide batter among prepared wells, filling to the top.
  3. Bake until puffed and crisp, 30 to 35 minutes. (Do not open oven during baking.) Serve immediately.
