Rich, velvety, and infused with a hint of espresso, this decadent Chocolate Mousse is the perfect way to satisfy your sweet tooth.
Chocolate Mousse
Makes 2 servings
Ingredients
- ¼ cup sugar
- ¼ cup whole milk
- 2 large egg yolks
- ½ teaspoon instant espresso powder
- ¼ teaspoon kosher salt
- 4 ounces bittersweet chocolate, finely chopped
- 2 tablespoons cold unsalted butter, cubed
- ½ cup cold heavy whipping cream
- 1 teaspoon vanilla extract
- Garnish: chopped fresh strawberries
Instructions
- In a large heatproof bowl, whisk together sugar, milk, egg yolks, espresso powder, and salt. Place bowl over a saucepan of simmering water, and cook, whisking constantly, until mixture is thickened and an instant-read thermometer registers 160°, 3 to 5 minutes. Remove bowl from heat. Add chocolate and cold butter; whisk until melted and mixture is smooth. Let cool completely, about 20 minutes.
- In a medium bowl, beat cold cream and vanilla with a hand mixer fitted with the whisk attachment at medium-high speed just until stiff peaks form. Using a rubber spatula, fold whipped cream into chocolate mixture in three additions until well combined and no white streaks remain. Spoon mixture into desired serving dishes. Cover and refrigerate until set, about 4 hours, preferably overnight. Garnish with strawberries, if desired, before serving.
