Stir-Fried Swiss Chard

Swiss chard cooks faster than collards, making them perfect for weeknight suppers.

Stir-Fried Swiss Chard
 
Makes about 4 servings
Ingredients
  • 6 slices thick-cut bacon, cut into ½-inch pieces
  • 1 (1-inch) piece fresh ginger, peeled and minced
  • 3 cloves garlic, minced
  • 3 bunches Swiss chard, stemmed and torn into 3-inch pieces (16 packed cups)
  • ⅓ cup sliced green onion
  • 1 tablespoon honey
  • 1 tablespoon rice wine vinegar
  • ½ teaspoon crushed red pepper
  • ½ teaspoon kosher salt
Instructions
  1. In a 12-inch cast-iron skillet, cook bacon over medium heat until crisp, about 12 minutes. Remove bacon using a slotted spoon, and let drain on paper towels, reserving 1 tablespoon drippings in skillet.
  2. Increase heat to medium-high. Add ginger and garlic; cook until fragrant, about 30 seconds. Add greens in batches, stirring until wilted between each addition; cook for 3 minutes. Stir in green onion, honey, vinegar, red pepper, and salt. Top with cooked bacon just before serving.
