Mini Cheese Balls

Have a little fun with your holiday presentation by turning these yummy truffles into the shape of a Christmas tree or a wreath or snowflake if you prefer.

Mini Cheese Balls
 
Makes 25
Ingredients
  • 1 (8-ounce) block cream cheese, softened
  • 1 cup finely shredded sharp Cheddar cheese
  • 2 ounces goat cheese, softened
  • 1 tablespoon finely chopped pimientos
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh rosemary
  • ½ cup finely chopped toasted pecans
  • 2 tablespoons chopped fresh thyme
  • ½ cup finely chopped dried cranberries
  • ¼ cup finely chopped roasted, salted pistachios
  • ¼ cup grated Parmesan cheese
  • Pretzel sticks and crackers, to serve
Instructions
  1. In a large bowl, mix together cream cheese, Cheddar, goat cheese, pimientos, Worcestershire, salt, and garlic powder. Using a 1-tablespoon spring-loaded scoop, divide mixture into 25 equal portions, and roll into balls.
  2. In a small bowl, combine parsley, tarragon, chives, and rosemary. Roll 5 truffles in herb mixture, pressing gently to adhere.
  3. In another small bowl, combine pecans and thyme. Roll another 5 truffles in pecan mixture, gently pressing to adhere.
  4. In another small bowl, place cranberries. Roll another 5 truffles in cranberries, gently pressing to adhere.
  5. In another small bowl, place pistachios. Roll another 5 truffles in pistachios, gently pressing to adhere.
  6. In another small bowl, place Parmesan. Roll remaining 5 truffles in Parmesan, gently pressing to adhere.
  7. Arrange truffles on a serving platter in the shape of a Christmas tree. Serve with pretzel sticks and crackers, if desired.
