Apple Butter Waffles

Makes 10
Ingredients
  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons baking powder
  • 1½ teaspoons kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1¾ cups whole milk, room temperature
  • 3 large eggs
  • ¾ cup unsalted butter, melted
  • 1½ cups apple butter, divided
  • 1½ teaspoons vanilla extract
  • ⅓ cup chopped walnuts, toasted
  • 1 cup pure maple syrup
  • Garnish: toasted chopped walnuts
Instructions
  1. Preheat oven to 200°.
  2. In medium bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another medium bowl, whisk together milk, eggs, butter, ½ cup apple butter, and vanilla. Add flour mixture to milk mixture, whisking until well combined (mixture will be slightly lumpy). Stir in walnuts. Let stand for 2 minutes.
  4. Heat an electric waffle maker on medium setting. Lightly spray each side with cooking spray. Pour ½ cup batter into waffle maker, spreading slightly with a small spatula. Cook until golden brown, 1 to 2 minutes. Place cooked waffles on baking pan in preheated oven to keep warm while cooking remaining waffles.
  5. In a small bowl, stir together maple syrup and remaining 1 cup apple butter. Top each waffle with syrup mixture. Garnish with walnuts, if desired. Serve immediately.
