Apple Cobbler

Filling
  1. 6 cups peeled and diced Golden Delicious apple (about 4 medium)
  2. 3 tablespoons sweetened dried cranberries
  3. 1⁄2 cup firmly packed light brown sugar
  4. 2 tablespoons sugar
  5. 2 tablespoons all-purpose flour
  6. 1 tablespoon fresh lemon juice
  7. 1 teaspoon vanilla extract
  8. 1 teaspoon ground cinnamon
  9. 1⁄4 teaspoon ground ginger
  10. 1⁄8 teaspoon ground allspice
  11. Pinch of kosher salt
Topping
  1. 1 cup all-purpose flour
  2. 1 tablespoon sugar
  3. 1 1⁄2 teaspoons baking powder
  4. 1⁄2 teaspoon kosher salt
  5. 1⁄2 teaspoon ground cinnamon
  6. 3 tablespoons cold unsalted butter, cubed
  7. 1⁄2 cup whole milk
  8. Vanilla frozen yogurt or ice cream, to serve
Instructions
  1. FIRST Preheat oven to 400°. In a large bowl, stir together apple and remaining filling ingredients. Spread mixture into an 11x81⁄2-inch baking dish sprayed with nonstick cooking spray. Set aside.
  2. NEXT In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon for topping. Using a pastry blender or fork, cut butter into flour mixture until it resembles coarse crumbs. Whisk in milk until dough comes together. (Dough will be sticky.) Tear dough into 6 pieces; drop evenly over filling.
  3. LAST Bake until browned and bubbly, 25 to 30 minutes. Serve with vanilla frozen yogurt or ice cream.
