Baked Beef and Bean Tater Tot Casserole

Baked Beef and Bean Tater Tot Casserole
 
Makes 6 servings
Ingredients
  • 1 pound lean ground beef
  • ½ cup chopped onion
  • ½ cup chopped bell pepper
  • 2 (16-ounce) cans black beans, rinsed and drained
  • 1 (16-ounce) can pinto beans, rinsed and drained
  • 1 (18-ounce) bottle barbecue sauce
  • ½ cup beef broth
  • 1 tablespoon tomato paste
  • ½ teaspoon ground black pepper
  • ½ (32-ounce) bag frozen Tater Tots (do not thaw)
  • 1 cup shredded sharp Cheddar cheese
  • Garnish: chopped green onion, diced tomato, sour cream
Instructions
  1. Preheat oven to 375°.
  2. In a 10-inch enamel-coated cast-iron skillet, cook beef, onion, and bell pepper over medium-high heat, stirring occasionally and breaking up meat with a wooden spoon, until beef is browned and crumbly. Drain; return beef mixture to skillet. Add all beans, barbecue sauce, broth, tomato paste, and black pepper. Bring to a gentle boil over medium-high heat, stirring occasionally. Reduce heat to medium-low; cover and simmer, stirring occasionally, for 10 minutes.
  3. Remove from heat, and place tots in a single layer on top of beans mixture.
  4. Bake until tots are golden brown, about 35 minutes. Sprinkle cheese on top; bake until melted, about 5 minutes more. Garnish with green onion, tomato, and sour cream, if desired.
