This cheesy side dish will quickly become a highly requested recipe for your family.
Brenda Gantt's Hash Smash
Makes about 10 servings
Ingredients
- ½ cup salted butter
- 1 cup chopped green onion
- 1 cup sour cream
- 1 (10.5-ounce) can cream of chicken soup
- 1 (30-ounce) bag shredded frozen hash browns
- 1 (11-ounce) can Mexican corn, drained
- ¼ cup chopped fresh seeded jalapeño
- 2 cups shredded sharp Cheddar cheese
- Salt and ground black pepper, to taste
- Sour cream, green onion, and hot sauce, to serve
Instructions
- Preheat oven to 350°. Spray a 13x9-inch casserole dish with cooking spray.
- In a 10-inch cast-iron skillet, melt butter over medium heat. Add green onion, and cook until softened, about 3 minutes.
- In a large mixing bowl, stir together sour cream and cream of chicken soup. Add green onion, hash browns, corn, jalapeño, cheese, and salt and pepper to taste.
- Spoon mixture into prepared casserole dish, and bake until thoroughly heated and golden brown, 30 to 40 minutes. Serve with sour cream, green onion, and hot sauce.
