If preparing this salad ahead of time, mix everything else together and add crackers just before serving to make sure they stay crunchy.
Cracker Salad
Makes 4 to 6 servings
Ingredients
- 2 pounds ripe tomatoes, seeded and chopped (1-inch pieces)
- 2 tablespoons kosher salt
- ¾ cup mayonnaise
- ¼ cup chopped fresh basil
- 2 tablespoons chopped fresh parsley
- 2 teaspoons chopped fresh dill
- ½ teaspoon ground black pepper
- 1 sleeve saltine crackers, crumbled, or 2 cups mini saltine crackers
- Garnish: fresh basil leaves
Instructions
- In a large bowl, toss together tomatoes and salt. Let sit at room temperature for 30 minutes. Drain well.
- Add mayonnaise, basil, parsley, dill, and pepper, and stir together until well combined.
- Add crackers and stir until well combined. Serve immediately. Garnish with basil, if desired.
