Cracker Salad

If preparing this salad ahead of time, mix everything else together and add crackers just before serving to make sure they stay crunchy.

Cracker Salad
 
Makes 4 to 6 servings
Ingredients
  • 2 pounds ripe tomatoes, seeded and chopped (1-inch pieces)
  • 2 tablespoons kosher salt
  • ¾ cup mayonnaise
  • ¼ cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons chopped fresh dill
  • ½ teaspoon ground black pepper
  • 1 sleeve saltine crackers, crumbled, or 2 cups mini saltine crackers
  • Garnish: fresh basil leaves
Instructions
  1. In a large bowl, toss together tomatoes and salt. Let sit at room temperature for 30 minutes. Drain well.
  2. Add mayonnaise, basil, parsley, dill, and pepper, and stir together until well combined.
  3. Add crackers and stir until well combined. Serve immediately. Garnish with basil, if desired.
