Savory Shepherd's Pie Casserole
- 1 pound ground sirloin
- 1 pound ground pork
- 2 cups pearl onions
- 1 cup diced carrot
- 1 cup English peas
- 1 (15-ounce) can crushed tomatoes
- ½ cup beef broth
- 6 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons balsamic vinegar
- 2 teaspoons kosher salt
- 2 teaspoons dried thyme
- 1 teaspoon dried basil
- 1 teaspoon smoked paprika
- 1 teaspoon ground black pepper
- 4 large sweet potatoes, peeled, cooked, and mashed
- ⅓ cup heavy whipping cream
- Preheat oven to 350°. Spray a 2- to 3-quart baking dish with cooking spray.
- In a large skillet, cook beef and pork over medium-high heat until browned and crumbly; drain. Add onions, carrot, peas, tomatoes, broth, garlic, tomato paste, vinegar, salt, thyme, basil, paprika, and pepper; bring to a simmer. Reduce heat to low, and simmer for 10 minutes.
- Spoon mixture into prepared dish.
- In a large bowl, beat mashed sweet potatoes and cream with a mixer at medium speed until combined. Spoon sweet potato mixture on top of meat mixture.
- Bake for 30 minutes. Increase oven temperature to broil. Broil for 5 minutes.
