Deviled Eggs with Radish Chow Chow

Ingredients
  • 7 hard-cooked eggs, peeled and halved lengthwise
  • 2 tablespoons mayonnaise
  • 1 teaspoon kosher salt
  • ¼ teaspoon dry mustard
  • ¼ cup drained Radish Chow Chow (recipe follows)
  • Garnish: Radish Chow Chow, ground black pepper
Instructions
  1. Scoop egg yolks into a medium bowl, and mash with a fork.
  2. Add mayonnaise, salt, and mustard, stirring to combine.
  3. Fold in Radish Chow Chow.
  4. Reserve 2 egg white halves for another use.
  5. Scoop filling into center of remaining egg whites.
  6. Garnish with Radish Chow Chow and pepper, if desired.
