Chocolate Peanut Butter Brownies

Ingredients
  • BROWNIES
  • 1 cup unsalted butter
  • 1 cup semisweet chocolate morsels
  • 4 large eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • FROSTING
  • 6 tablespoons unsalted butter, melted
  • ⅓ cup creamy peanut butter
  • ¼ cup whole milk
  • 2 teaspoons vanilla extract
  • 2½ cups confectioners’ sugar
  • Garnish: chopped peanuts
Instructions
  1. For brownies, preheat oven to 350°. Line a 13x9-inch baking pan with parchment paper or foil, letting excess extend over sides of pan.
  2. In a large microwave-safe bowl, place butter and chocolate. Microwave on high in 30-second intervals, stirring between each, until chocolate is melted and mixture is smooth. Let cool to room temperature.
  3. Add eggs, one at a time, whisking well after each addition. Add sugar, vanilla, and salt, stirring until well combined. Stir in flour and cocoa. Pour batter into prepared pan, smoothing top with an offset spatula.
  4. Bake until a wooden pick inserted in center comes out clean, 22 to 25 minutes. Let cool completely in pan.
  5. Using excess parchment or foil as handles, remove brownies from pan. Pour frosting over brownies, spreading to edges with a spatula. Garnish with peanuts, if desired. Let frosting set for 1 hour. Cut into 2-inch squares. Store in an airtight container for up to 1 week.
  6. For frosting, in a medium bowl, stir together melted butter, peanut butter, milk, and vanilla until combined. Stir in confectioners’ sugar.
