Chocolate-Coconut Hand Pies
 
Makes 8
Ingredients
  • 1 cup whole milk
  • ¼ cup granulated sugar
  • 2 large egg yolks
  • 2 tablespoons cornstarch
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • ½ cup sweetened flaked coconut
  • 1 teaspoon vanilla extract
  • ½ teaspoon coconut extract
  • 1 (14.1-ounce) package refrigerated piecrusts
  • 1 large egg
  • 1 tablespoon water
  • ½ cup confectioners’ sugar
  • 2½ to 3 tablespoons heavy whipping cream
Instructions
  1. In a medium saucepan, heat milk over medium-high heat, whisking occasionally, until steaming (do not boil). Remove from heat.
  2. In a medium bowl, whisk together granulated sugar, egg yolks, cornstarch, cocoa, and salt. Gradually add ½ cup hot milk to egg mixture, whisking constantly. Return mixture to saucepan, whisking to combine. Cook over medium heat, whisking constantly, until boiling. Let cook for 1 to 2 minutes to remove cornstarch flavor. Remove from heat; whisk in butter until melted and combined. Whisk in coconut and extracts. Pour into a medium bowl; cover with plastic wrap, pressing directly onto surface to prevent a film from forming. Refrigerate for at least 1 hour before using.
  3. Preheat oven to 400°. Line a baking sheet with parchment paper.
  4. Unroll each piecrust on a lightly floured surface. Using a 4½-inch round cutter, cut 4 rounds from each piecrust. Place rounds on prepared pan. Spoon about 3 tablespoons chocolate filling into center of each circle. In a small bowl, whisk together egg and 1 tablespoon water. Brush edges of dough with egg wash. Fold dough in half over filling. Using the tines of a fork dipped in flour, crimp edges to seal each pie. Refrigerate for 15 minutes.
  5. Bake until golden brown, 15 to 20 minutes. Let cool completely on a wire rack.
  6. In a medium bowl, whisk together confectioners’ sugar and cream to desired co6nsistency. Using a pastry brush, cover pies with glaze and let stand until set, about 10 minutes.
Notes
KITCHEN TIP-Although we think it’s the perfect finishing touch, you can skip the glaze on these pies if you prefer desserts with a sublter sweetness.
