Apple Tuna Salad
- 1 large hard-boiled egg
- 1 cup mayonnaise
- ½ cup diced Pink Lady apple
- ⅓ cup finely chopped celery
- 2 tablespoons minced red onion
- 1 teaspoon fresh lemon juice
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly cracked black pepper
- 2 (12-ounce) cans solid white tuna in spring water, drained and flaked
- Peel and chop hard-boiled egg. Place in a medium bowl, and stir in mayonnaise, apple, celery, onion, lemon juice, salt, and pepper. Stir in tuna. Cover and refrigerate for at least 1 hour before serving.
