Black Beans
 
Makes 6 to 7 cups
Ingredients
  • 1 pound dried black beans*, rinsed and soaked overnight
  • 1 jalapeño, diced (seeded, if desired)
  • ½ cup minced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons kosher salt
  • 2 bay leaves
Instructions
  1. In a large Dutch oven, combine beans, jalapeño, onion, garlic, salt, and bay leaves. Cover with water by 1 inch. Bring to a boil over medium-high heat. Reduce to a simmer, cover, and cook, stirring occasionally, until tender, 1½ to 2 hours. Discard bay leaves before serving.
Notes
*We used Camellia® Brand Black Beans.

MAKE-AHEAD TIPS
To soak beans, first rinse and sort beans. Place beans in a large bowl and cover with cold water 2 inches above beans. Cover and let stand at room temperature overnight. Drain.
