Smoked Chicken Salad
- 2 cups loosely packed fresh chopped mustard greens
- 2 cups shredded romaine lettuce
- 3 cups chopped smoked chicken
- ½ cup thinly sliced seedless cucumber
- 1 cup cherry tomatoes, quartered
- ¾ cup whole buttermilk
- ⅓ cup mayonnaise
- 3 tablespoons chopped fresh dill
- 3 tablespoons chopped fresh chives
- 2 teaspoons apple cider vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Seeded bread, to serve
- Garnish: fresh dill
- In a large bowl, combine mustard greens, lettuce, chicken, cucumber, and tomatoes.
- In a small bowl, whisk together buttermilk, mayonnaise, dill, chives, vinegar, salt, and pepper. Divide salad evenly among serving plates. Drizzle with buttermilk mixture. Serve on seeded bread, and garnish with dill, if desired.
