Sweet Potato Fries
- 2 pounds small sweet potatoes, peeled and cut into ½-inch fries
- Vegetable cooking oil, for frying
- Kosher salt, to taste
- Line a rimmed baking sheet with paper towels. Place a wire rack over pan.
- In a large bowl, cover cut potatoes with cold water. Let soak for at least 30 minutes. Remove potatoes from water; drain and pat dry.
- In a large Dutch oven, pour oil to a depth of 3 inches, and heat over medium heat until a deep-fry thermometer registers 375°.
- Working in batches, fry potatoes until browned and crisp, 3 to 5 minutes. Remove from oil, and let drain on paper towels. Sprinkle with salt, to taste.
