White Wine Sauce
 
Makes 2½ cups
Ingredients
  • ¼ cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups half-and-half
  • ¼ cup dry white wine
  • 2 teaspoons fresh thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup freshly shredded Parmesan cheese
Instructions
  1. In a 3-quart saucepan, melt butter over medium heat. Add flour, and cook for 1 minute. Whisk in half-and-half, wine, thyme, salt, and pepper. Cook, whisking constantly, until thickened, 4 to 5 minutes. Stir in cheese. Serve immediately.
