White Wine Sauce
- ¼ cup unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups half-and-half
- ¼ cup dry white wine
- 2 teaspoons fresh thyme
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ⅓ cup freshly shredded Parmesan cheese
- In a 3-quart saucepan, melt butter over medium heat. Add flour, and cook for 1 minute. Whisk in half-and-half, wine, thyme, salt, and pepper. Cook, whisking constantly, until thickened, 4 to 5 minutes. Stir in cheese. Serve immediately.
