In a medium bowl, whisk together eggs, milk, applesauce, butter, and vanilla.
In a large bowl, mix together oats, brown sugar, baking powder, cinnamon, salt, and ginger. Fold in apple, ½ cup pecans, and dates. Stir in milk mixture until dry ingredients are wet. Spoon into prepared pan. Cover with plastic wrap, and refrigerate overnight. Let stand at room temperature for 30 minutes before baking.
Preheat oven to 350°. Sprinkle with remaining ½ cup pecans.
Bake until center is set and top is golden brown, 40 to 45 minutes. Serve with yogurt and cane syrup, if desired.
