Fudgy Chocolate Peanut Butter Brownie Sundaes
 
Makes 6 servings
Ingredients
  • 1⅓ cups sugar
  • 1 cup all-purpose flour
  • ⅓ cup unsweetened Dutch process cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter
  • ⅔ cup semi-sweet chocolate chips, divided
  • 2 tablespoons creamy peanut butter
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup mini peanut butter cups
  • Vanilla ice cream, to serve
  • Garnish: chocolate-covered peanuts, hot fudge, mini peanut butter cups
Instructions
  1. Preheat oven to 325 °. Spray a 9x9-inch baking pan with baking spray with flour.
  2. In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, and salt until combined.
  3. In a medium microwave-safe bowl, combine butter and ⅓ cup chocolate chips; heat on high for 1 minute. Stir until chocolate is melted. Stir in peanut butter. Whisk in eggs and vanilla. Stir chocolate mixture into flour mixture until well combined. Stir in peanut butter cups and remaining ⅓ cup chocolate chips. Pour batter into prepared pan, and smooth to edges with spatula.
  4. Bake until a wooden pick inserted in center comes out clean, 45 to 50 minutes. Serve warm with ice cream. Garnish with chocolate-covered peanuts, hot fudge, and mini peanut butter cups, if desired.
