Green Onion Drop Biscuits with Shrimp and Tomato Gravy
Makes 6 to 8 servings
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons kosher salt
1 teaspoon sugar
½ teaspoon baking soda
8 tablespoons unsalted butter, melted and divided
1½ cups sour cream
1 cup sliced green onion
½ teaspoon Creole seasoning
Shrimp and Tomato Gravy (recipe follows)
Garnish: sliced green onion
Instructions
Preheat oven to 400°. Line a rimmed baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, salt, sugar, and baking soda. Add 6 tablespoons melted butter in a slow, steady stream, whisking constantly, until mixture resembles coarse crumbs. Stir in green onion and sour cream until a shaggy dough forms. Spoon 8 (½-cup) spoonfuls of batter 1½ inches apart onto prepared pan.
Bake until golden brown, 12 to 15 minutes.
In a small bowl, stir together Creole seasoning and remaining 2 tablespoons melted butter, and brush on top of biscuits. Serve with Shrimp and Tomato Gravy, and garnish with green onion, if desired.
