Spicy Pineapple Salsa
 
Makes about 2 cups
Ingredients
  • 1 tablespoon olive oil
  • 1 medium poblano pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 2 cups chopped fresh pineapple
  • 2 green onions, chopped
  • ¼ cup minced red onion
  • 1 tablespoon thinly sliced fresh cilantro
  • 1 tablespoon seeded minced jalapeño
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon kosher salt
Instructions
  1. In a medium skillet, heat oil over medium-high heat. Add poblano; cook, stirring frequently, until lightly browned, about 4 minutes. Add garlic, and cook, stirring constantly, for 1 minute. Spoon into a bowl; let cool. Stir in pineapple and all remaining ingredients.
