Grits Casserole
 
Makes 4 to 6 servings
Ingredients
  • 2½ cups water
  • ⅔ cup white grits
  • 2 teaspoons kosher salt
  • 2 large eggs, separated
  • 1 (5-ounce) container crème fraîche
  • 2 cups shredded smoked Gouda cheese
Instructions
  1. Preheat oven to 350°. Lightly spray a 1-quart baking dish with cooking spray.
  2. In a medium saucepan, combine 2½ cups water, grits, and salt. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer until tender and thickened, about 15 minutes. Transfer to a large bowl, and let cool for 5 minutes. Whisk in egg yolks and crème fraîche and cheese until smooth.
  3. In the bowl of a stand mixer fitted with the whisk attachment, beat egg whites at medium-high speed until stiff peaks form. Fold into grits in two additions until no streaks remain. Transfer to prepared baking dish.
  4. Bake until golden brown, 35 to 40 minutes. Let stand for 5 minutes before serving.
