Smash Burger Tacos
 
Makes 4 to 6 Servings
Ingredients
  • 1 (15-ounce) can black beans, drained
  • ¼ cup finely chopped grape tomatoes
  • 2 tablespoons minced yellow onion
  • 2 tablespoons chopped fresh cilantro
  • ½ teaspoon lime zest
  • 2 tablespoons fresh lime juice, divided
  • 2¼ teaspoons Creole seasoning, divided
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • ½ teaspoon dried dill
  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • 6 taco-size flour tortillas
  • ¼ cup crumbled queso fresco
  • Garnish: chopped fresh cilantro
Instructions
  1. In a medium bowl, combine beans, tomatoes, onion, cilantro, 1 tablespoon lime juice, and 1 teaspoon Creole seasoning.
  2. In a small bowl, stir together lime zest, mayonnaise, sour cream, dill, ¼ teaspoon Creole seasoning, and remaining 1 tablespoon lime juice.
  3. In another medium bowl, mix together beef, chili powder, garlic, and remaining 1 teaspoon Creole seasoning until well combined. Divide mixture into 6 portions (about 2.5 ounces each). Spread each portion onto a tortilla.
  4. Heat a large skillet or griddle over medium-high heat. Add tortillas meat side down, and cook until golden brown, 4 to 5 minutes. Top with bean mixture, and drizzle with mayonnaise mixture. Garnish with cilantro, if desired.
