Classic Macaroni and Cheese
 
Makes 10 to 12 Servings
Ingredients
  • ½ cup unsalted butter
  • ½ cup all-purpose flour
  • 1½ teaspoons kosher salt
  • 2 cups whole milk
  • 2 cups heavy whipping cream
  • 2 cups shredded sharp Cheddar cheese
  • 1 cup shredded fontina cheese
  • 1 cup shredded Gouda cheese
  • 1 (16-ounce) package elbow macaroni, cooked according to package instructions
Instructions
  1. Preheat oven to 375°. Spray a 2-quart baking dish with cooking spray.
  2. In a 3½-quart Dutch oven, melt butter over medium heat. Sprinkle with flour and salt; cook, stirring constantly, until fragrant, about 2 minutes. Gradually stir in milk and cream until fully incorporated. Cook, stirring frequently, until thickened and bubbly, 8 to 10 minutes.
  3. In a large bowl, combine cheeses. Reserve 1 cup. Gradually add remaining cheese mixture to sauce, stirring constantly until melted and smooth. Stir in pasta. Spoon into prepared pan. Sprinkle reserved 1 cup cheese on top.
  4. Bake until golden brown and bubbly, about 20 minutes.
