Creamy Smoked Cheddar Grits

Makes about 6 servings
Ingredients
  • 6 cups water
  • 1 tablespoon kosher salt
  • ½ teaspoon ground black pepper
  • 1½ cups stone-ground grits
  • 6 ounces smoked Cheddar cheese, shredded
  • ⅓ cup heavy whipping cream
  • 3 tablespoons unsalted butter
  • 1 tablespoon hot sauce, or to taste
  • Butter, to serve
Instructions
  1. In a medium cast-iron Dutch oven or large saucepan, bring 6 cups water, salt, and pepper to a boil over medium-high heat. Slowly add grits, whisking constantly. Reduce heat to medium-low; cook, whisking occasionally, until tender, 40 to 45 minutes (partially cover, if necessary). Add cheese, cream, butter, and hot sauce, stirring until smooth. Serve with butter.
