Parmesan-Crusted Carrots
- 12 ounces multicolored baby carrots, halved lengthwise
- 1 to 2 tablespoons unsalted butter, melted
- ¼ teaspoon kosher salt
- ¼ teaspoon garlic powder
- ⅛ teaspoon ground black pepper
- ½ cup freshly grated Parmesan cheese, divided
- Preheat oven to 400°. Line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss together carrots, melted butter, salt, garlic powder, and pepper until well combined. Add ¼ cup cheese, and toss until carrots are well coated.
- Sprinkle remaining ¼ cup cheese onto prepared pan. Arrange carrots on top of cheese in a single layer.
- Bake until tender and golden brown, 20 to 25 minutes, turning carrots halfway through baking. Let cool on pan until slightly warm. Serve immediately.
