Spiced Pumpkin Seeds
- 1 cup raw pumpkin seeds
- 2 teaspoons unrefined coconut oil, melted
- 1 teaspoon lime zest
- 1 tablespoon fresh lime juice
- ¼ teaspoon kosher salt
- ½ teaspoon ground coriander
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cumin
- ¼ teaspoon ground black pepper
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon ground red pepper
- Preheat oven to 350°. Line a baking sheet with foil.
- In a small bowl, stir together pumpkin seeds, oil, lime zest and juice, salt, coriander, turmeric, cumin, black pepper, cinnamon, and red pepper. Spread in an even layer onto prepared pan.
- Bake until fragrant, stirring halfway through, 10 to 12 minutes. Let cool completely.
