Mayo-Hot Sauce-Marinated Wings
- 3 pounds chicken wings
- ⅓ cup mayonnaise
- 2 tablespoons honey
- 2 tablespoons hot sauce
- 2 tablespoons fresh lemon juice
- 2½ teaspoons kosher salt, divided
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- Buffalo wing sauce and celery sticks, to serve
- Cut off and discard wing tips; cut wings in half at joint. Place in a large resealable plastic bag.
- In a small bowl, stir together mayonnaise, honey, hot sauce, lemon juice, 1½ teaspoons salt, garlic powder, and pepper. Pour over wings, tossing to coat. Seal bag, and refrigerate for 4 hours or up to overnight.
- Preheat oven to 400°. Spray a 15½x10½-inch rimmed cast-iron pan with cooking spray.
- Remove wings from marinade, letting excess drip off; discard marinade. Place wings in a single layer on prepared pan. Spray with cooking spray. Sprinkle with remaining 1 teaspoon salt.
- Bake until an instant-read thermometer inserted in thickest portion registers 165°, 25 to 30 minutes, turning halfway through baking. Increase oven temperature to broil. Broil wings until browned, about 3 minutes. Serve with wing sauce and celery.
