Broccoli, Ham, & Cheddar Cobbler
 
Makes 6 to 8 servings
Ingredients
  • 1 tablespoon olive oil
  • 4 cups diced ham
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 2½ teaspoons kosher salt, divided
  • 1 cup heavy whipping cream
  • 4 cups chopped fresh broccoli
  • 3 cups shredded sharp Cheddar cheese, divided
  • 2 cups self-rising flour
  • 1 teaspoon sugar
  • ½ teaspoon baking soda
  • 6 tablespoons cold unsalted butter, grated
  • 1⅓ cups whole buttermilk
  • 3 tablespoons minced fresh chives
  • Garnish: minced fresh chives
Instructions
  1. Preheat oven to 425°.
  2. In a 12-inch skillet, heat oil over medium heat. Add ham, and cook, stirring occasionally, until lightly browned, 7 to 10 minutes. Remove from skillet.
  3. In same skillet, melt ¼ cup butter over medium heat. Whisk in all-purpose flour. Cook, whisking constantly, until aromatic and lightly toasted, about 1 minute. While whisking constantly, gradually add milk until fully combined and smooth. Whisk in 2 teaspoons salt and cream. Cook, stirring frequently, until thickened, 3 to 5 minutes. Remove from heat, and stir in ham, broccoli, and 2 cups Cheddar cheese until just combined. Pour into a 13x9-inch baking dish.
  4. In a medium bowl, whisk together self-rising flour, sugar, baking soda, and remaining ½ teaspoon salt. Whisk in grated butter and remaining 1 cup Cheddar cheese until well coated with flour. Stir in buttermilk and chives until just combined. Scoop batter with a 2-tablespoon spring-loaded scoop on top of ham mixture. Gently spread together without touching edges of dish.
  5. Bake until golden brown and bubbly, 20 to 25 minutes. Garnish with chives, if desired.
