Pizza Dough
- 2 cups all-purpose flour
- 1½ teaspoons kosher salt
- 1½ teaspoons instant yeast
- 1 teaspoon sugar
- ⅔ cup warm water (100° to 110°)
- 1 tablespoon olive oil
- In a large bowl, whisk together flour, salt, yeast, and sugar. Add ⅔ cup warm water and oil, and mix with your hands or stir with a fork until a shaggy dough forms. Cover and let rest at room temperature for 20 minutes.
- Turn out dough onto a lightly floured surface, and knead until dough becomes smooth and elastic, 7 to 10 minutes. (Dough will be sticky at first but will become less so the longer you knead; try to resist adding too much excess flour. Lightly grease a large bowl. Place dough in bowl, turning to grease top. Cover and let rise in a warm, draft-free place (75°) until doubled in size, about 45 minutes. (See kitchen tip.) Use immediately.
