Chocolate Chip Banana Snack Cake

Makes 1 (8-inch) cake
Ingredients
  • ½ cup unsalted butter, cubed
  • ¾ cup mashed ripe bananas (about 2 medium bananas)
  • ½ cup granulated sugar
  • ½ cup firmly packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1⅔ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ½ cup sour cream
  • ¼ cup whole milk
  • ½ cup milk chocolate chips
  • Garnish: confectioners’ sugar
Instructions
  1. Preheat oven to 350°. Line an 8-inch square baking pan with parchment paper, letting excess extend over all sides of pan.
  2. In a small saucepan, melt butter over medium heat. Cook until butter turns a medium-brown color and has a nutty aroma, about 10 minutes. Pour into a large bowl; let cool slightly, about 15 minutes.
  3. Add bananas, granulated sugar, brown sugar, egg, and vanilla to butter mixture, and whisk until combined.
  4. In a medium bowl, whisk together flour, baking powder, salt, baking soda, and cinnamon. Whisk flour mixture into butter mixture. Add sour cream and milk, whisking just until combined. Fold in chocolate chips. Spoon batter into prepared pan, spreading evenly with a small offset spatula.
  5. Bake until golden brown and a wooden pick inserted in center comes out clean, 35 to 40 minutes. Let cool completely in pan on a wire rack. Using excess parchment as handles, remove from pan. Garnish with confectioners’ sugar, if desired.
