3 pounds boneless country-style pork ribs, trimmed and cut into 2-inch pieces
Wooden skewers, soaked in water for 30 minutes
Instructions
In a medium bowl, whisk together ketchup, brown sugar, vinegar, Worcestershire, onion powder, garlic powder, black pepper, and red pepper. Reserve 1⁄2 cup marinade for serving.
Place pork in a large resealable plastic bag; pour remaining ketchup mixture over pork. Seal bag; refrigerate for at least 8 hours.
Remove pork from bag; discard marinade. Let stand at room temperature for at least 30 minutes. Preheat grill to medium-high heat (350° to 400°). Thread pork onto skewers.
Grill over indirect heat, turning occasionally, until meat is cooked through, 20 to 25 minutes. Serve with reserved 1⁄2 cup marinade.
