Barbecue-Marinated Pork Kabobs

Ingredients
  • 1 cup ketchup
  • 1⁄4 cup firmly packed light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1⁄2 teaspoon crushed red pepper
  • 3 pounds boneless country-style pork ribs, trimmed and cut into 2-inch pieces
  • Wooden skewers, soaked in water for 30 minutes
Instructions
  1. In a medium bowl, whisk together ketchup, brown sugar, vinegar, Worcestershire, onion powder, garlic powder, black pepper, and red pepper. Reserve 1⁄2 cup marinade for serving.
  2. Place pork in a large resealable plastic bag; pour remaining ketchup mixture over pork. Seal bag; refrigerate for at least 8 hours.
  3. Remove pork from bag; discard marinade. Let stand at room temperature for at least 30 minutes. Preheat grill to medium-high heat (350° to 400°). Thread pork onto skewers.
  4. Grill over indirect heat, turning occasionally, until meat is cooked through, 20 to 25 minutes. Serve with reserved 1⁄2 cup marinade.
