Grilled Corn with Cilantro-Lime Butter
Makes 8 servings
Ingredients
- 8 ears fresh corn in husks
- 1 cup unsalted butter, room temperature
- ½ cup chopped fresh cilantro
- 2 teaspoons chile, lime, and salt seasoning*, plus more to taste
- 2 teaspoons lime zest
- 2 tablespoons olive oil
- 1 cup crumbled cotija cheese
- Lime slices, to serve
Instructions
- Working in batches, microwave corn in husks on high until warmed, 2 to 3 minutes, rearranging halfway through cooking time.
- In a medium bowl, stir together butter, cilantro, chile seasoning, and lime zest.
- Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°), or heat a cast-iron grill pan over medium-high heat.
- Shuck corn, leaving a few pieces of husk attached to use as a handle. Tie husks together with kitchen twine, if desired.
- Lightly brush oil onto corn. Grill, turning occasionally, until kernels are tender and browned, about 8 minutes. Serve hot with butter mixture, cheese, chile seasoning, and lime slices.
*We used Tajin Clasico Seasoning.
