Marinated Tomato and Cucumber Salad with Whipped Feta
Makes 2 to 4 servings
Ingredients
- 1 cup halved assorted cherry or grape tomatoes
- 2 small heirloom tomatoes, seeded and diced
- 1 cup sliced cucumber
- ½ cup sliced yellow onion
- ¼ cup olive oil
- 2 tablespoons white wine vinegar
- 1½ teaspoons kosher salt, divided
- 1 teaspoon fresh oregano leaves
- 1 (8-ounce) block feta cheese
- 1 cup whole Greek yogurt
- 1 teaspoon lemon zest
- Garnish: fresh oregano
Instructions
- In a large bowl, combine all tomatoes, cucumber, onion, oil, vinegar, 1 teaspoon salt, and oregano. Let stand for at least 30 minutes.
- In the work bowl of a food processor, pulse feta until crumbled. Add yogurt, lemon zest, and remaining ½ teaspoon salt, and process until smooth. Spread onto a serving platter. Using a slotted spoon, spoon tomato mixture on top of feta mixture. Garnish with oregano, if desired. Serve immediately.
