Marinated Tomato and Cucumber Salad with Whipped Feta
 
Makes 2 to 4 servings
Ingredients
  • 1 cup halved assorted cherry or grape tomatoes
  • 2 small heirloom tomatoes, seeded and diced
  • 1 cup sliced cucumber
  • ½ cup sliced yellow onion
  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar
  • 1½ teaspoons kosher salt, divided
  • 1 teaspoon fresh oregano leaves
  • 1 (8-ounce) block feta cheese
  • 1 cup whole Greek yogurt
  • 1 teaspoon lemon zest
  • Garnish: fresh oregano
Instructions
  1. In a large bowl, combine all tomatoes, cucumber, onion, oil, vinegar, 1 teaspoon salt, and oregano. Let stand for at least 30 minutes.
  2. In the work bowl of a food processor, pulse feta until crumbled. Add yogurt, lemon zest, and remaining ½ teaspoon salt, and process until smooth. Spread onto a serving platter. Using a slotted spoon, spoon tomato mixture on top of feta mixture. Garnish with oregano, if desired. Serve immediately.
