These tender biscuits are layered with melty cheese and herbs.
Cheddar-Herb Biscuits
Makes about 18
Ingredients
- 6 cups all-purpose flour
- 2 tablespoons baking powder
- 2 teaspoons kosher salt
- 1 teaspoon baking soda
- 1 cup cold unsalted butter, cubed
- 3½ cups heavy whipping cream, divided
- ¼ cup unsalted butter, melted
- 1½ cups shredded white Cheddar cheese, divided
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh rosemary
Instructions
- Line 2 large rimmed baking sheets with parchment paper.
- In a large bowl, stir together flour, baking powder, salt, and baking soda. Using two forks or a pastry blender, cut in cold butter until mixture is crumbly. Make a well in center of flour mixture; add 3¼ cups cream. Using a fork, stir until a dough begins to form.
- Preheat oven to 450°. Turn out dough onto a lightly floured surface, and knead gently until a dough forms. Roll ½ inch thick. Brush with melted butter. Sprinkle with 1 cup cheese, parsley, chives, and rosemary; pat gently into dough. Fold dough into thirds, like a letter. Roll ¾ inch thick. Cut into 3x3-inch squares. Place on prepared pans. Brush with remaining ¼ cup cream, and sprinkle with remaining ½ cup cheese.
- Bake until golden brown, 15 to 18 minutes.
