Yield: approximately 3 cups
Ingredients
- 5 avocados, halved, pitted, and peeled
- 1⁄4 cup extra-virgin olive oil
- 1⁄4 cup fresh lime juice
- 1 teaspoon salt
- 1 clove garlic, minced
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- Sweet-potato chips
- Garnish: sour cream
Instructions
- In the work bowl of a food processor, pulse avocados until chunky. With motor running, slowly add olive oil, lime juice, and salt.
- In a medium bowl, combine avocado mixture, cilantro, basil, and parsley, stirring well.
- Serve with sweet-potato chips, and drizzle with sour cream, if desired.
