Ingredients
  1. 5 avocados, halved, pitted, and peeled
  2. 1⁄4 cup extra-virgin olive oil
  3. 1⁄4 cup fresh lime juice
  4. 1 teaspoon salt
  5. 1 clove garlic, minced
  6. 2 tablespoons chopped fresh cilantro
  7. 2 tablespoons chopped fresh basil
  8. 2 tablespoons chopped fresh parsley
  9. Sweet-potato chips
  10. Garnish: sour cream
Instructions
  1. In the work bowl of a food processor, pulse avocados until chunky. With motor running, slowly add olive oil, lime juice, and salt.
  2. In a medium bowl, combine avocado mixture, cilantro, basil, and parsley, stirring well.
  3. Serve with sweet-potato chips, and drizzle with sour cream, if desired.
