Apple Cobbler

Yield: approximately 6 servings
Filling
- 6 cups peeled and diced Golden Delicious apple (about 4 medium)
- 3 tablespoons sweetened dried cranberries
- 1⁄2 cup firmly packed light brown sugar
- 2 tablespoons sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon ground ginger
- 1⁄8 teaspoon ground allspice
- Pinch of kosher salt
Topping
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon ground cinnamon
- 3 tablespoons cold unsalted butter, cubed
- 1⁄2 cup whole milk
- Vanilla frozen yogurt or ice cream, to serve
Instructions
- FIRST Preheat oven to 400°. In a large bowl, stir together apple and remaining filling ingredients. Spread mixture into an 11x81⁄2-inch baking dish sprayed with nonstick cooking spray. Set aside.
- NEXT In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon for topping. Using a pastry blender or fork, cut butter into flour mixture until it resembles coarse crumbs. Whisk in milk until dough comes together. (Dough will be sticky.) Tear dough into 6 pieces; drop evenly over filling.
- LAST Bake until browned and bubbly, 25 to 30 minutes. Serve with vanilla frozen yogurt or ice cream.
