Marinated Goat Cheese

Ingredients
  1. 1 (8- to 10-ounce) round goat cheese
  2. 2 cloves garlic, smashed
  3. 2 sprigs fresh rosemary
  4. 3 small whole dried chiles, such as chile de arbols
  5. ½ cup extra-virgin olive oil
  6. Garnish: sea salt, ground black pepper, rosemary
  7. Toasted bread slices (optional)
Instructions
  1. In a small serving dish, place goat cheese, garlic, rosemary, and chiles; pour olive oil over goat cheese.
  2. Refrigerate at least 3 hours before serving. Garnish with salt, pepper, and rosemary, if desired. Serve with toasted bread slices, if desired. Store, covered, in refrigerator up to 1 week.
