Ingredients
  1. 1 1⁄2 cups oat bran
  2. 1⁄2 cup quick-cooking oats (not instant)
  3. 1 cup whole buttermilk
  4. 1⁄3 cup vegetable oil
  5. 1 large egg, lightly beaten
  6. 2⁄3 cup sugar
  7. 1⁄2 teaspoon vanilla extract
  8. 1 cup all-purpose flour
  9. 1 teaspoon baking soda
  10. 1 teaspoon baking powder
  11. 1⁄2 teaspoon salt
  12. 1⁄2 cup sweetened dried cranberries
  13. 1⁄4 cup chopped crystallized ginger
Instructions
  1. Preheat oven to 375°. Spray a 12-cup muffin pan with nonstick baking spray with flour. Set aside.
  2. In a large bowl, combine oat bran, oats, and buttermilk. Let stand 10 minutes.
  3. In a medium bowl, whisk together oil, egg, sugar, and vanilla. Add to oat mixture, stirring to combine.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt. Add to oat mixture, stirring to combine. Stir in cranberries and ginger. Spoon into prepared pan.
  5. Bake until a wooden pick inserted in center comes out clean, approximately 15 minutes.
