Ingredients
- 1 1⁄2 cups oat bran
- 1⁄2 cup quick-cooking oats (not instant)
- 1 cup whole buttermilk
- 1⁄3 cup vegetable oil
- 1 large egg, lightly beaten
- 2⁄3 cup sugar
- 1⁄2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup sweetened dried cranberries
- 1⁄4 cup chopped crystallized ginger
Instructions
- Preheat oven to 375°. Spray a 12-cup muffin pan with nonstick baking spray with flour. Set aside.
- In a large bowl, combine oat bran, oats, and buttermilk. Let stand 10 minutes.
- In a medium bowl, whisk together oil, egg, sugar, and vanilla. Add to oat mixture, stirring to combine.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Add to oat mixture, stirring to combine. Stir in cranberries and ginger. Spoon into prepared pan.
- Bake until a wooden pick inserted in center comes out clean, approximately 15 minutes.
