This moist sheet cake has a white-chocolate frosting (with melted white chocolate stirred right in!) and a garnish of crushed peppermint.
White Chocolate-Peppermint Cake

Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup half-and-half
- ½ cup sour cream
- White Chocolate Frosting (recipe follows)
- Garnish: crushed peppermint, white chocolate curls
Instructions
- Preheat oven to 350°. Spray a 13x9-inch baking dish with nonstick baking spray with flour. Set aside.
- In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, 3 to 4 minutes, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
- In a medium bowl, stir together flour, baking powder, and salt. With mixer on low speed, add flour mixture to butter mixture in thirds, alternating with half-and-half, beginning and ending with flour mixture. Beat until well combined. Add sour cream, beating to combine. Spread batter evenly in prepared dish.
- Bake until a wooden pick inserted in center comes out clean, 30 to 40 minutes. (Loosely cover with aluminum foil during last 10 minutes to prevent excess browning, if necessary.) Let cool completely on a wire rack.
- Spread White Chocolate Frosting on top of cake. Garnish with crushed peppermint and white chocolate curls, if desired.

- 8 (1-ounce) squares white chocolate, chopped
- ½ cup heavy whipping cream
- ⅔ cup butter, softened
- 1 teaspoon vanilla extract
- 6 cups confectioners’ sugar
Instructions
- In a medium bowl, microwave white chocolate and cream in 30-second intervals, stirring in between each interval until melted and smooth, approximately 1½ minutes. Let cool.
- In a large bowl, combine white chocolate mixture, butter, and vanilla. Beat at medium speed with an electric mixer until fluffy. Gradually add confectioners’ sugar, beating until smooth.
