This apple, pecan, and date Baked Oatmeal is the coziest way to start your morning.

Baked Oatmeal
 
Makes 6 to 8 servings
Ingredients
  • 3 large eggs
  • 1½ cups whole milk
  • ½ cup unsweetened applesauce
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 3 cups old-fashioned oats
  • ½ cup firmly packed light brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground ginger
  • 1 cup chopped Pink Lady apple
  • 1 cup chopped pecans, divided
  • ½ cup pitted and chopped dried dates
  • Vanilla Greek yogurt and cane syrup, to serve
Instructions
  1. Spray a 2-quart baking dish with cooking spray.
  2. In a medium bowl, whisk together eggs, milk, applesauce, butter, and vanilla.
  3. In a large bowl, mix together oats, brown sugar, baking powder, cinnamon, salt, and ginger. Fold in apple, ½ cup pecans, and dates. Stir in milk mixture until dry ingredients are wet. Spoon into prepared pan. Cover with plastic wrap, and refrigerate overnight. Let stand at room temperature for 30 minutes before baking.
  4. Preheat oven to 350°. Sprinkle with remaining ½ cup pecans.
  5. Bake until center is set and top is golden brown, 40 to 45 minutes. Serve with yogurt and cane syrup, if desired.
