Who needs takeout when you can make this Irresistible Orange Glazed Chicken in less than an hour?
Orange Glazed Chicken
Makes 4 to 6 servings
Ingredients
- 1 (4- to 5-pound) whole chicken, cut into 10 pieces
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon ground black pepper
- ¼ cup sliced green onion
- ¼ cup firmly packed light brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 tablespoon chili powder
- ¼ teaspoon crushed red pepper
- 1 cup orange marmalade
- ¼ cup apple cider vinegar
- ¼ cup chili sauce
- ¼ cup low-sodium soy sauce
- Broiled Green Beans (recipe follows) and hot white rice, to serve
- Garnish: sliced green onion
Instructions
- Preheat oven to 400°. Line a rimmed baking sheet with foil.
- Arrange chicken in an even layer on prepared baking sheet. Drizzle with oil, and rub to evenly coat. Sprinkle with salt and pepper.
- Bake for 10 minutes.
- In a large bowl, combine green onion, brown sugar, garlic, ginger, chili powder, crushed red pepper, marmalade, vinegar, chili sauce, and soy sauce. Reserve ¼ cup to serve. Brush chicken with half remaining orange marmalade mixture.
- Bake 15 minutes more. Brush with remaining orange marmalade mixture, and bake until golden brown, caramelized, and an instant-read thermometer inserted into chicken breast pieces registers 165° and inserted into thighs registers 170°, 10 to 15 minutes more.
- Increase oven temperature to broil. Broil chicken until browned and bubbly, 5 to 7 minutes. Serve with Broiled Green Beans, white rice, and reserved ¼ cup orange marmalade mixture. Garnish with sliced green onion, if desired.
Broiled Geen Beans
Makes 4 to 6 servings
Ingredients
- 1½ pounds cleaned green beans
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
Instructions
- Preheat oven to broil. Line a rimmed baking sheet with foil.
- Drizzle green beans with oil, and sprinkle with salt. Transfer to prepared baking sheet, and broil until just tender and lightly browned, 5 to 7 minutes.
