These Smash Burger Tacos combine the best of burgers and tacos for a winning dinner the whole family will love.
Smash Burger Tacos
Makes 4 to 6 Servings
Ingredients
- 1 (15-ounce) can black beans, drained
- ¼ cup finely chopped grape tomatoes
- 2 tablespoons minced yellow onion
- 2 tablespoons chopped fresh cilantro
- ½ teaspoon lime zest
- 2 tablespoons fresh lime juice, divided
- 2¼ teaspoons Creole seasoning, divided
- 1 tablespoon mayonnaise
- 1 tablespoon sour cream
- ½ teaspoon dried dill
- 1 pound ground beef
- 1 teaspoon chili powder
- 1 clove garlic, minced
- 6 taco-size flour tortillas
- ¼ cup crumbled queso fresco
- Garnish: chopped fresh cilantro
Instructions
- In a medium bowl, combine beans, tomatoes, onion, cilantro, 1 tablespoon lime juice, and 1 teaspoon Creole seasoning.
- In a small bowl, stir together lime zest, mayonnaise, sour cream, dill, ¼ teaspoon Creole seasoning, and remaining 1 tablespoon lime juice.
- In another medium bowl, mix together beef, chili powder, garlic, and remaining 1 teaspoon Creole seasoning until well combined. Divide mixture into 6 portions (about 2.5 ounces each). Spread each portion onto a tortilla.
- Heat a large skillet or griddle over medium-high heat. Add tortillas meat side down, and cook until golden brown, 4 to 5 minutes. Top with bean mixture, and drizzle with mayonnaise mixture. Garnish with cilantro, if desired.
