Parmesan-Crusted Carrots

Parmesan-Crusted Carrots
 
Makes 2 to 4 servings
Ingredients
  • 12 ounces multicolored baby carrots, halved lengthwise
  • 1 to 2 tablespoons unsalted butter, melted
  • ¼ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground black pepper
  • ½ cup freshly grated Parmesan cheese, divided
Instructions
  1. Preheat oven to 400°. Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss together carrots, melted butter, salt, garlic powder, and pepper until well combined. Add ¼ cup cheese, and toss until carrots are well coated.
  3. Sprinkle remaining ¼ cup cheese onto prepared pan. Arrange carrots on top of cheese in a single layer.
  4. Bake until tender and golden brown, 20 to 25 minutes, turning carrots halfway through baking. Let cool on pan until slightly warm. Serve immediately.
