Chicken and Cornmeal Dumplings with Sausage and Greens

Ingredients
  1. 1 tablespoon vegetable oil
  2. 1 cup chopped smoked sausage
  3. 1 cup chopped yellow onion
  4. 1⁄2 cup chopped carrot
  5. 1⁄2 cup chopped celery
  6. 2 teaspoons minced fresh garlic
  7. 4 cups chicken broth
  8. 3 cups chopped collard greens, firmly packed
  9. 2 cups water
  10. 1 tablespoon minced fresh thyme
  11. 1 tablespoon distilled white vinegar
  12. 1 teaspoon salt
  13. 1⁄4 teaspoon crushed red pepper
  14. 1 (14.5-ounce) can diced fire-roasted tomatoes, drained
  15. 3 cups chopped cooked chicken
  16. Cornmeal Drop Dumplings (recipe follows)
Instructions
  1. In a large Dutch oven, heat oil over medium-high heat. Add sausage, onion, carrot, celery, and garlic. Cook, stirring occasionally, until sausage is lightly browned, approximately 4 minutes. Add broth, greens, 2 cups water, thyme, vinegar, salt, red pepper, and tomato. Bring to a boil over medium-high heat. Reduce heat to medium-low; simmer, covered, 10 minutes. Stir in chicken.
  2. Bring broth mixture to a boil over medium-high heat. Drop tablespoonfuls of Cornmeal Drop Dumplings batter into broth. Cover, and reduce heat to medium-low. Simmer until dumplings are puffed and cooked through, approximately 15 minutes.

Cornmeal Drop Dumplings
 
Yields: approximately 15 dumplings
Ingredients
  • 1 cup self-rising flour
  • 3⁄4 cup plain white or yellow cornmeal
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon ground black pepper
  • 1⁄2 cup whole milk
  • 2 tablespoons butter, melted
  • 1 large egg
Instructions
  1. In a large bowl, stir together flour, cornmeal, salt, and pepper. In a small bowl, whisk together milk, melted butter, and egg. Add milk mixture to flour mixture, stirring until combined.
