Bacon Patty Melts
 
Makes 4
Ingredients
  • 8 slices thick-cut bacon
  • 1 cup sliced sweet onions
  • 4 (4-ounce) ground beef patties
  • Comeback Sauce (recipe follows)
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 tablespoon unsalted butter
Comeback Sauce
  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons finely chopped white onion
  • 1 tablespoon stone-ground mustard
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
Instructions
  1. In a large skillet, cook bacon in a single layer over medium heat, turning occasionally, until brown and crisp, 10 to 15 minutes. Remove bacon from skillet, and let drain on paper towels. Remove drippings from pan, but do not wipe skillet clean.
  2. Add onions to skillet; cook, stirring occasionally, until caramelized and soft, 10 to 15 minutes. Remove onions and set aside.
  3. Increase heat to medium-high. In same skillet, add patties and smash to spread them. Cook patties, turning halfway through, until seared and cooked to desired doneness, 3 to 4 minutes on each side. Remove patties and wipe skillet clean.
  4. Spread Comeback Sauce on 1 side of each bread slice. For each sandwich, layer 1 bread slice, 1 slice cheese, 2 slices bacon, one-fourth of caramelized onions, 1 patty, 1 slice cheese and 1 bread slice.
  5. Add 1 tablespoon butter to skillet. Working in 2 batches, cook sandwiches, turning halfway through, until bread is golden brown and, cheese is melted, 2 to 3 minutes on each side. Serve immediately.
Comeback Sauce
  1. In a small bowl, stir together all ingredients until well combined. Cover and chill for at least 30 minutes or overnight before serving.
