BLT Pasta Salad
Makes about 6 servings
Ingredients
- 8 ounces large elbow macaroni
- 2½ teaspoons kosher salt, divided
- 4 cups sliced romaine lettuce
- 1 cup refrigerated prepared ranch dressing, divided
- 2 large tomatoes, chopped
- 8 slices thick-cut bacon, cooked and crumbled
- 1½ cups shredded sharp Cheddar cheese
- ½ teaspoon ground black pepper
- Garnish: shredded sharp Cheddar cheese, cooked crumbled bacon
Instructions
- Cook pasta according to package directions with 2 teaspoons salt. Drain, and rinse with cold water to stop the cooking process. Refrigerate until ready to use.
- In a large bowl, toss together lettuce and ¼ cup dressing; arrange on a serving platter.
- In a medium bowl, combine pasta, tomatoes, bacon, cheese, pepper, remaining ¾ cup dressing, and remaining ½ teaspoon salt. Spoon onto lettuce. Garnish with cheese and bacon, if desired.
