BLT Pasta Salad
BLT Pasta Salad
 
Makes about 6 servings
Ingredients
  • 8 ounces large elbow macaroni
  • 2½ teaspoons kosher salt, divided
  • 4 cups sliced romaine lettuce
  • 1 cup refrigerated prepared ranch dressing, divided
  • 2 large tomatoes, chopped
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1½ cups shredded sharp Cheddar cheese
  • ½ teaspoon ground black pepper
  • Garnish: shredded sharp Cheddar cheese, cooked crumbled bacon
Instructions
  1. Cook pasta according to package directions with 2 teaspoons salt. Drain, and rinse with cold water to stop the cooking process. Refrigerate until ready to use.
  2. In a large bowl, toss together lettuce and ¼ cup dressing; arrange on a serving platter.
  3. In a medium bowl, combine pasta, tomatoes, bacon, cheese, pepper, remaining ¾ cup dressing, and remaining ½ teaspoon salt. Spoon onto lettuce. Garnish with cheese and bacon, if desired.
